Another Sunday, another recipe!
This week Wild Rice Lentil Casserole!
3 cups broth (chicken or vegetable)
3/4 cup lentils
1/2 cup wild rice
3/4 cup chopped onion
Italian seasoning and garlic powder to taste
1 pouch grated cheese
1. Preheat the oven to 300 degrees.
2. Mix all ingredients except the cheese in a baking dish (I use a deep 9x13).
3. Cover with foil and bake for 1 hour 15 minutes.
4. Remove the foil, add the cheese and asparagus spears, and bake for an additional 15 minutes.
It's a great side with either grilled or baked chicken breasts or breaded, baked fish.
